tiramisu cheesecake…

yeah, baby.

here she is, as promised, in all her luscious, rich, caffeinated glory.
this cheesecake is so incredibly delicious and it’s even better accompanied with a cup of coffee.
I can’t think of a better way to widen your hiney top off dinner.

Tiramisu Cheesecake

2 8 oz packages of cream cheese
1/2 cup sugar
1/2 tsp vanilla
2 eggs
2 TB brandy
batch of Ladyfingers
1/2 cup espresso (or very strong coffee)

half pint whipping cream
1/4 cup powdered sugar

cocoa powder

cream the cream cheese and sugar until fluffy. (1 minute)

stir in vanilla.

Add eggs, one at a time. stirring well after each addition.

blend in the brandy.

arrange Ladyfingers in the bottom and sides of pie pan.

soak Ladyfingers with your espresso. (I use a pastry brush.)

pour cheesecake batter on top.

bake for 35-40 mins.
cool cheesecake for a half an hour and then chill for at least 3 hours. (or overnight)

remove from refrigerator and dust with cocoa.

whip the whipping cream until soft peaks form, add sugar and finish beating until stiff.
cover cake with whipped cream and dust again lightly with cocoa.

oh……

my.

…….heavenly.
