so, out of all the baking ingredients in the entire world, I think the one I have used the least, is Bisquick. I have always been totally turned off by it. maybe it’s the fact that there’s shortening in it and you just keep it in a box in your pantry. (ugh!)
at any rate, the couple times I have bought it was to have on hand to make “last minute” pancakes for the kids. other than that, the box would just sit up in my pantry like a naughty toadstool, left alone in the dark as it matured into a hearty fungus. then, the next time I realized I still had a box, it needed thrown out.
growing up, my mother would always make an absolutely delicious coconut pie, using “our questionable staple, at hand” and I have made it once or twice. but recently, while on an internet quest for the perfect quiche, I stumbled upon a recipe from a bed and breakfast.
it called for…….Bisquick!
I decided to try it. mainly because of my depressing lack of counter space, in which I need, in order to create the perfect crust!
I LOVE this quiche! I don’t know how often I’ve made it since I found it. but it is so easy and quick to throw together. perfect for treating out of town guests!
